3 lbs shoulder roast,boned
salt & pepper 1 pkg. fresh or frozen spinach 1/2 lb. ricotta cheese,thinly sliced |
1/2 lb. Italian sausage meat
2 hard boiled eggs, chopped 1 small onion,diced |
Bone the roast and cut into 3 pieces. Place on a sheet of wax paper, shingle fashion
Slightly flatten with pounder
Salt and pepper meat
Cook the spinach as directed on the package. Cool and squeeze out water. Place spinach down the center line of the meat. Spread over this the ricotta cheese, chopped eggs and onion. Carefully roll up and tie to keep its shape. Cook in a 350F oven for 1 1/2 hours.
