Pork Tenderloin,Spiced with Mango Salsa Meats

MANGO SALSA
2 ripe medium mangoes, peeled and coarsely chopped
2 medium Kiwi fruit, peeled and coarsely chopped
3 tbsp. seasoned rice vinegar
1 tbsp. grated peeled fresh ginger
1 tbsp. minced fresh Cilantro
PORK
2 pork tenderloins(about 1 lb. each)
3 tbsp all-purpose flour
1 tsp. salt
1 tsp. groung cumin
1 tsp. ground coriander
1/2 tsp. groung cinnamon
1/2 tsp. ground ginger

1. Prepare Mango Salsa: In a medium bowl, mix all salsa ingredients. Cover and refrigerate if not serving right away. Makes about 4 cups of salsa.

2 Prepare Pork: Cut each pork tenderloin lengthwise almost in half, being careful not to cut all the way through. Open and spread flat. Place each tenderloin between 2 sheets of plastic wrap; with meat mallet or rolling pin, pound to 1/4 inch thickness. Cut each tenderloin into 4 pieces.

3. On waxed paper, mix flour, salt, cumin, coriander, cinnamon, and ginger; use to coat pork.

4.Place pork on grill over medium heat and cook 6 to 7 minutes, turning pork over once, until lightly browned on both sides and pork just loses its pink color throughout. Serve with Mango Salsa.

Makes 8 main-dish servings
