Variety, Beef Tongue, Boiled Meats

3 to 4 lb. beef tongue
1/4 cup vinegar
2 tbsp. sugar
1 onion,sliced
1 large garlic clove,minced
2 bay leaves
6 whole cloves
6 peppercorns,crushed
2 cups tomato sauce
1 sliced onion
garlic powder

Wash tongue thoroughly with warm water. Put in a pot and cover with cold water. Bring slowly to boiling point,skimming to remove scum. When boiling,cook 5 to 10 minutes, removing scum. Add vinegar, sugar, sliced onion,garlic, bay leaves,cloves and peppercorns. Cover pot and simmer 2 or 3 hours or until you can remove the skin. Strain cooking liquid, add tomato sauce, onion and garlic powder and heat.

Place tongue in a roasting pan and pour over the liquid. Cover. Put in a 325F oven for 2 more hours or until tongue is tender. Baste frequently and remove cover for the last 30 minutes.

Reserve liquid from pot and roasting pan to make soup.
