Variety, Sweetbreads Czech Meats

1 calf sweetbread
2 tbsp. butter
1 med. onion,chopped
salt & pepper to taste
3 strips of bacon,diced
veg. extract concentrate
1 tsp. flour

See "Sweetbreads Paprika" for general method of prepartion.

Cut sweetbreads into bite-size pieces.

Add bacon dice to fry pan and fry to glaze stage. Add chopped onion and fry to golden.

Place sweetbreads on top of onion-bacon and fry 2 minutes per side.Add pepper, veg. concentrate and a little water and steam,covered, until soft; about 10 minutes. Sprinkle with flour and stir to brown. Add more veg. concentrate and liquid. Then steam 5 minutes until thick.

Serve with knockerlyn,rice or noodles.
