Variety, Sweetbreads Weiner Schnitzel Meats

1 lb. calf sweetbreads
2 tbsp. flour
2 eggs, beaten
1 cup breadcrumbs
butter + olive oil(1/4 cup)

See "Sweetbreads Paprika" for general method of prepartion.

Drain prepared sweetbreads on paper towels to dry. Dip in flour, eggs and breadcrumbs.

Heat fry pan to 350F. Add butter and olive oil. When foamy, add sweetbreads and fry unyil golden brown on both sides.

Serve with potato puree.
