Veal Paprika Meats

1 1/2 lbs. boneless veal shoulder
2 tbsp. butter
1 large onion
1 can undiluted consomme
1 can water
1/2 tsp. salt
1/8 tsp. pepper
1 tbsp. paprika
2 tbsp. flour
1/4 tsp. baking soda
1 cup sour cream

Cut veal into 1" cubes. Dredge in flour.

Slice the onions and separate into rings. Heat fry pan to 300F;add butter and fry the onions until golden. Remove to a stew pot. Raise pan heat to 350F. Add more butter,if necessary. Toss in the veal and brown on all sides. Remove to stew pot. Pour in the consomme and water and scrape up all the goodies. Put in the stew pot. Add the salt, pepper and paprika. Cover and simmer for 1 hour or until meat is tender.

Before serving, mix flour and baking soda into sour cream smoothly, stir into veal mixture and cook slowly for 5 minutes. Stir constantly. Makes enough for 6.
