Veal Roast with Kidneys | Meats |
4 to 6 lb. rump or leg of veal, boned and tied
2 veal kidneys 1 tbsp. paprika |
1/4 cup butter,melted
1/4 cup cream 1/4 cup water |
Have your butcher bone the roast and place the kidneys in the cavity, leaving fat on the kidneys for internal basting. Have him tie the roast. At home untie and coat kidneys with paprika. Retie. Sprinkle the roast with paprika . Heat oven to 325F. Put roast in roasting pan and baste with the butter-cream-water mix. Roast ,uncovered for 2 1/2 to 3 hours(35 minutes per lb.,weight after boning). Baste frequently. If desired, gravy may be thickened with flour.
Peeled, parboiled potatoes may be baked in the same pan with the meat. This roast is usually served with a cucumber salad and a vegetable. Serves 8 easily.
