Potato Dumplings (Plnene Knedliky) Pancakes & Dumplings

2 cups mashed potatoes,about 4 medium sized
salt to taste
1 or 2 egg yolks or 1 egg
1/2 cup flour
1/2 cup wheat hearts
1/2 to 3/4 cup breadcrumbs or
1/4" cubes
2 tbsp.butter

Cook the potatoes in boiling water until soft.( about 20 minutes) Peel, then press through a ricer and cool. Add salt.

Brown the breadcrumbs or cubes in bubbly butter in a heated saucepan.

Whisk the egg yolks and combine egg yolks, potatoes, wheat hearts, bread crumbs and flour. Mix and shape into rolls the size of an egg. Place in boiling, salted water and cook 10 to 15 minutes. Remove from water with a slotted spoon and prick with a toothpick to let steam escape Keep warm until ready to serve and then slice lengthwise in half. Serve with a sauce or gravy with roast pork.

FOR STUFFED DUMPLINGS omit the breadcrumbs and add more flour,if necessary,to roll out onto a floured board. Cut into 2" x 2" x 1/4" and put in the middle about 1 tsp. of either(a) chopped smoked meat,(b)chopped cooked ham,(c)chopped cooked bacon or

(d)chopped cooked ground meat which has been flavored with spices. Make into 1 1/2"diam balls and cook in boiling,salted water for 8 to 10 minutes. Remove with slotted spoon and prick.
