Poutine Rapees | Pancakes & Dumplings |
4 cups potato puree
1/2 tsp. salt 1 cup wheat hearts 1 cup flour 2 eggs FILLING: |
1 lb. ground pork
2 finely chopped onions salt & pepper to taste 1/2 tsp. thyme 1/2 tsp. parsley 1/4 cup red wine |
Combine all ingredients and blend thoroughly. Roll out on a floured board about 1/4" to 1/2" thick. Cut into 4" squares and fill with 1 tbsp. of slightly cooked and flavored ground pork. Put 1 tbsp. pork mix in the centre and mold the dough around the meat to make a 3" ball. Seal. Cook in boiling,salted water for 30 minutes ( add some oil to the water). Remove with slotted spoon and drain. Prick with a toothpick to let steam escape. Keep warm until serving.
Serve with maple syrup, sugar or ketchup,as desired;and a tossed salad.
FILLING: Fry the onion slightly and add the pork. Cook until no longer pink. Add spices and 1/4 cup red wine and simmer 10 minutes,covered. Strain the cooked meat in a colanded to remove excess fat and set aside to cool for filling Poutine Rapees.
