Strawberry Dumplings Pancakes & Dumplings

24 oz. cottage cheese(dry)
1 1/8 cup flour
5/8 cup sweet butter
1 egg+ 1 egg yolk
2 boxes strawberries
sugar
butter
ground ginger snaps

Blend cottage cheese to a fine quality. Combine eggs with softened butter. Add cottage cheese. After blending, add flour to consistancy of soft dough.

Divide into 24 parts and flatten into circles about 4 1/2"diam. and 1/2" thick. Place 3 strawberries( 4 small) on dough. Fold and surround;-making it into a ball. Put in boiling salted water and cook about 8 minutes. Remove to a warm dish. Serve with grated ginger snaps and melted butter as a dessert.
