Yeast Pancakes Livance | Pancakes & Dumplings |
3 cups flour+
2 1/2 cups milk 2 eggs 1 1/2 tbsp. sugar 1/2 tsp. salt 1 tbsp. dry yeast 1/2 cup warm water |
1 tsp. sugar
butter or margerine melted butter cinnamon sugar or apple jelly + icing sugar |
In a bowl, mix eggs with milk, sugar and salt and beat well.
Add flour and beat well again. Add yeast (which has been raised in the warm water-sugar mix for 10 minutes.) and stir in, mixing thoroughly. Let stand to rise, in a warm place, for about 1 hour.
Grease a hot griddle with butter or margerine.Make small pancakes, 1 tbsp. of batter, each. When browned on both sides, brush each side with melted butter.
(1) sprinkle with cinnamon sugar and serve, or;
(2) dribble with softened jelly and sprinkle with icing sugar
BLUEBERRY LIVANCE
Just before cooking pancakes, fold in 2 cups of blueberries, gently. Make pancakes as above and serve with maple syrup.
