Couscous Pilaf II | Pasta & Grains |
2 tsp. vegetable oil
2 onions, finely chopped 2 cloves garlic,minced 1 tsp. ground cumin 1/2 tsp. ground coriander 1/2 tsp. ginger 3 1/2 cups chicken or vegetable stock |
2 cups quick-cooking couscous
1/2 cup raisins 4 tbsp. chopped fresh parsley or coriander salt and pepper 1/2 cup chopped toasted almonds CANADIAN LIVING LIGHT AND HEALTHY COOKBOOK page 93 |
In a heavy saucepan, heat oil over medium-low heat; cook onion and garlic, stirring, for 2 to 3 minutes or until onion is softened.
Add cumin, coriander and ginger; cook, stirring, for 1 minute or until aromatic. Add stock and bring to a simmer.
Remove from heat; stir in couscous and raisins. Cover and let stand for 5 minutes; fluff with a fork. Stir in parsley; season
with salt & pepper to taste. Transfer to a serving dish; sprinkle with almonds. Makes 8 servings
