1 large onion,chopped
1 garlic clove,minced 6 sprigs parsley, chopped 1/4 cup olive 1 can tomatoes(1 lb. 12 oz.) 1 can tomato paste( 7 oz.) 2 bay leaves 1 tsp. salt 1/4 tsp. pepper |
1/2 cup water
1 lb. ground beef 1 small onion, chopped 4 tbsp. butter or margerine 3 tbsp. flour 3/4 cup grated Parmesan cheese 2 cups milk 2 egg yolks 1 pkg(1 lb.) lasagne noodles |
(1)TOMATO SAUCE:Chop the onion, garlic and parsley and fry slightly in hot olive oil. Add tomatoes, tomato paste, bay leaves, salt, pepper, water and stir until well mixed. Then toss in the ground beef, breaking it in little pieces with a fork. Cover sauce , cook over a low heat for 45 minutes, giving it an occasional stir.
( NOTE) I would brown the beef first.
(2)CHEESE SAUCE:Chop the small onion fine and cook in melted butter a minute or two. Mix the flour smoothly, add grated cheese and a dash of salt.Gradually stir in milk and continue cooking over low heat, stirring constantly, until sauce is as thick as heavy cream. Beat egg yolks slightly, mix in a little hot cheese mix slowly, then mix all the cheese mix and yolks together and cook over low heat for 10 minutes longer. Remove from fire.
(3)LASAGNA NOODLES:Cook noodles as directed on package until tender,drain.Start oven at 325F and grease a large baking dish. Now put a layer of noodles on the bottom of dish, pour over enough tomato sauce to cover and add part of the cheese sauce. Continue with these layers until ingredients ate all used. Finish off with a covering of cheese sauce, bake 20 min., then broil until surface is bubbly gold. Serves 6.
