Pasta with Herb Sauce | Pasta & Grains |
1 lb. fettucelle or spaghetti
1/2 cup parsley leaves,minced 1/2 cup basil leaves,minced 1/2 clove garlic,minced |
1/2 cup olive oil
1 cup ricotta cheese, or creamed cottage cheese dash of cayenne pepper |
Cook the pasta according to package directions.
Meanwhile, combine the parsley, basil and garlic in a mortar. With a pestle pound them into a paste. Gradually work in the olive oil and cheese and season to taste with cayenne. Or blend ingredients in an electric blender.
Add sauce to the cooked, drained pasta and gently mix in. Serve immediately. Serves 4 to 6.
