Polenta Pasta & Grains

1 1/2 cups cornmeal
2 cups water
1 cup water
1 tsp. salt
butter
salt & pepper
parmesan cheese
toasted almonds(optional)

In a very heavy saucepan, mix cornmeal with 2 cups of water; add 1 more cup of water and salt. Bring to a boil,stirring constantly to be sure cornmeal does not lump. Continue cooking and stirring until mixture is smooth and thick. Pour into a mold or a strainer lined with cloth. Cover and steam over hot water for 2 hours or until cornmeal becomes a firm loaf. Serve in slices with plenty of butter,salt, pepper and parmesan cheese.

Also good with toasted almonds.
