Quinoa Pasta & Grains

1/2 cup quinoa(ki-NO-a)
1 cup water
1/4 tsp. salt

Place quinoa in a fine mesh sieve, rinse under cold running water. Drain quinoa well in the sieve or colander.

In a med. saucepan,combine drained quinoa, water and salt. Bring to boiling over high heat; reduce heat to low,cover and simmer for 15 minutes. Remove from heat. Drain in a colander if too much water remains. Serve as a rice substitute.

NOTES:Quinoa can be used in almost any way you use rice, bulgar, barley or millet. Quinoa is a complete protein,so it is a good base for a vegetarian meal. It adds a crunchy texture and subtle nutty flavor to pilafs, soups,casseroles, stuffings, salads and cooked cereals.
