White and Wild Rice Pilaf | Pasta & Grains |
3/4 cup wild rice
2 1/4 cups boiling water 1 tsp. salt 1 1/4 cups Basmati rice 1 1/2 cups chicken stock 1 tbsp. unsalted butter 2 tsp. freshly grated orange rind |
1/4 cup raisins
3/4 cup finely chopped onion 1 tbsp. unsalted butter 1/2 cup pine nuts, toasted lightly 1/4 cup minced fresh parsley leaves 1/4 cup thinly sliced scallion greens |
STEP 1: Put the wild rice in some cold water,stir and strain, removing any foreign matter. Bring 2 1/4 cups water to a boil; add salt and slowly add the wild rice,keeping the water boiling. Cover the pot and boil at a full simmer for 45 minutes or until rice is tender and most of the water is absorbed. Strain; set aside.
STEP 2:Put the Basmati rice in a bowl of cold water and stir.Pour off clowdy liquid and replace the water several times. Remove any foreign bits. Let rice sit in water for 1/2 hour.Strain the water off and let rice air dry for 1/2 hour in the strainer. Melt butter in a microwave saucepan until bubbly. Add rice and stir to coat it with the butter. Add the chicken broth and orange peel;stir and cover. Cook on #10 in the microwave for 5 to 6 minutes. Stir. Cook on # 4 setting for an additional 12 to 13 min.. Fluff up with a fork to separate rice grains. Set aside for 10 min.,minimum.
STEP 3:Cook the onions in butter over mod.-low heat until onions are softened. Plump the raisins in hot water for 1/2 hour. Strain.Combine the rices, onion and raisins.
STEP 4:Just before serving, fluff the rice and add the toasted pine nuts,parsley and scallion greens. Toss again.
Serves 8.
