Cream Cheese Pie with Fruit Glaze Topping Pastries & Pies

1 8" or 9" diam. prebaked graham waferpie crust Cheese Filling:
12 oz. Phil. cream cheese, cubed
1/2 cup sugar
1/3 cup milk
1 heaping tbsp. flour
1 tsp. grated lemon peel
dash of salt
1/4 tsp. vanilla
1 egg + 1 egg yolk, slightly beaten
Fruit Topping:
2 cups fruit, cut up
1/2 cup water
1/4 cup sugar
2 tbsp. cornstarch
dash of cinnamon
1 tsp. grated lemon rind,(optional)1 tsp. butter

Put the first 7 ingredients in the work bowl of your food processor and process until the mixture is creamy, scraping the bowl 2 or 3 times during mixing. Add the egg mixture slowly through the feed tube with the machine running. Process until smooth, scraping the bowl occasionaly. Turn into prepared graham cracker pie crust

and bake in 350 F oven for about 45 minutes or until crust appears set. Cool completely (2 or 3 hours).Glaze with your favorite fruit glaze topping. Spoon topping over pie and chill at least 2 hours before serving

FRUIT TOPPING:

Mix sugar, cornstarch and water. Put in a saucepan and heat, stirring constantly. When sugar is dissolved, add 1 cup of the cut-up fruit and continue cooking and stirring until the glaze is clear and thickened. I let it boil a minute or so, while stirring. Remove from heat. Add flavouring and butter. Add remaining fruit. Cool completely before putting on the pie.
