PatŽ Brise #1 Pastries & Pies

9" pie plate or flan pan
1 3/4 cups flour
3/4 cup cold sweet butter
3 TBSP sugar
4-5Tbsp ice water

Preheat oven to 375F (190 C).

Process in food processor using on/off position or use pastry blender to combine into coarse meal.

Add and process until ball is formed or mix with fork until dough holds it shape.

Roll out and press into pie plate. Prick with fork .Cover with wax paper and fill with dried beans. Bake for 15 minutes .Remove beans and paper and bake 25 minutes more.

NOTE. For pies that require further baking prebake for 15minutes only.
