Pumpkin Pie Pastries & Pies

one 9"pie crust
2 cups cooked and cooled pumpkin
1/2 or less cup milk
3 eggs, separated
1 cup sugar
1/2 tsp. cinnamon
1/8 tsp. cloves
1/8 tsp. nutmeg
1/2 tsp. salt
1 tsp. vanilla

Prepare pie crust.(See pat-in-place crust)

Beat the egg whites until they stand in peaks.

Beat the egg yolks slightly and add the rest of the ingredients and beat until smooth. Fold in the beaten egg whites and put mixture in the prepared pie crust.

Bake in a 350F oven for 45 minutes.
