2 1/2 cups pastry flour
1 cup sweet butter 1 egg 3+ soupspoons white vinegar 4 cups sliced fruit |
1/4 cup raisins
grated lemon cinnamon sugar icing sugar |
Mrs. Valenta's Recipe for Apple Strudel
Cut the cold butter into 1/2" cubes roughly. Put flour and butter in food processor and process on pulse until butter-flour mixture is like corn meal. Beat egg with a fork in a measuring cup. Add vinegar and blend with fork. With the processor on low speed, slowly add the liquid until just blended. Dump contents on a clean board or shelf. Form into a ball and wrap with saran. Chill for 1 hour or more
(Mrs Valenta let it sit overnight, but not in refrig.).Divide dough into 4 pieces. Roll out into 12"x18" pieces. Fill up the center with apple slices (about 4 cups or more). Sprinkle with grated lemon, cinnamon, sugar and raisins. Using water on your fingertips envelop the fruit with the pastry, sealing joints with water. Put 2 "logs" on a cooky sheet and cook in middle oven at 400F fot 15 min. and 300F for 20-25 min..Repeat for next 2 logs. Sprinkle with icing sugar and slice.
