Chicken, Potato Stuffed Poultry

3 lb. chicken
STUFFING
2 cups potatoes( 4 med. or 8 small red skinned precooked with skins on and cubed ( 1/2"))
10 to 12 chopped stuffed olives
3 chopped anchovies
2 chopped garlic cloves
1 tbsp. capers
2 tbsp. chopped parsley
1 tsp. chopped rosemary
2 to 3 tbsp. olive oil
fresh parsley

Combine stuffing ingredients and toss. Stuff chicken and truss. Cook in a 375F oven for 1 hour and 10 minutes or until done. To serve, cut in half ( down breast bone). Put on a serving plate and decorate with fresh parsley
