Chicken-Vegetable Stir Fry Mary Donahoe's Poultry

1 1/2 tsp. peanut oil, divided
2 tbsp. diagonaly sliced scallions
2 minced garlic cloves
1/2 cup sliced asparagus(1"slices)
1/2 cup sliced mushrooms
1/4 cup red pepper slices
1/2 tsp. sesame oil
1/2 lb. chicken cutlets , skinned and cut into 1/4 " strips
1 cup cooked long grain rice(hot)

Makes 2 servings

In a small non-stick pan heat 1/2 tsp oil, high heat, add scallion and garlic and saute until tender(2-3min.) Add vegetables and stir fry for 2 to 3 min..Remove from pan and set aside.

In the same pan heat the sesame oil and remaining peanut oil. Add the chicken and stir fry until chicken browns about 3 to 5 min.

Return vegetables to skillet. Add soya sauce and cook until heated thru (about 1-2 min), stirring constantly.

Serve with prepared rice.
