Chicken & Zucchini, Curried Couscous Poultry

2 medium onions, minced
6 tbsp. unsalted butter
2 tbsp. vegetable oil
6 skinless,boneless chicken breast halves, cut crosswise on the diagonal into 1/2" strips
3 small zucchini, cut into strips,
2 by 1/4 by1/4 inches
3 large minced garlic cloves
2 tsp. curry powder
2 1/4 cups chicken broth
1/2 cup heavy cream
1 1/4 cups couscous
2 tbsp. coarsely chopped fresh coriander leaves or 3/4 tsp. dried coriander

In a large skillet cook the onion in 2 tbsp. butter over moderately low heat, stirring, until it is softened. Reserve.

In another fry pan, heat the oil to moderately high heat until it is hot and saute the chicken pieces(which have been patted dry) in two batches,stirring, for 3 minutes each, or until golden brown, transferring them with a slotted spoon to a plate when done. Add 1 tbsp. of butter to the fry pan and cook the zucchini strips over mod. heat, stirring, for 2 min., or until tender. Transfer, with slotted spoon to the dish with the chicken and cover, loosely.Add

1/2 the cooked onion to the fry pan , reheat and add the garlic. Cook , stirring, for 1 min.; stir in the curry powder and cook, stirring, for 1 min..Stir in 1 cup chicken broth, bring to boil and reduce to 1/2 cup.Add cream and boil, stirring occasionaly until mixture thickens and coats metal spoon. Season with salt & pepper.Add the reserved chicken and zuchini and keep warm.

Meanwhile,reheat rest of onion, stir in 1 tsp. curry and cook, stirring,for 1 min. Add 1 tbsp. butter and remaining broth and bring to a boil. Put in a microwave saucepan and

bring to boil in microwave (about 2 minuted). Stir in couscous and salt and pepper to taste, cover saucepan immediately, and let couscous stand , off the heat for 5 min.

Add the remaining 2 tbsp. of butter, cut into bits, and let the couscous stand 1 minute. Fluff the couscous with a fork to break up any lumps, add the coriander and salt and pepper to taste, and toss again with a fork.Mound the couscous on a heated platter and make a well in the centre . Spoon the chicken mixture into the centre and sprinkle with 1 tsp. fresh coriander leaves (or fresh parsley).

Serves 5 or 6 with a tossed salad on the side.
