Turkey, Crepes Poultry

1 basic crepe recipe for 12 crepes
TURKEY FILLING:
1/4 cup chopped onion
1/4 cup chopped celery
2 tbsp. butter
1/2 cup chopped mushrooms
2 cups chopped turkey
2 tbsp. chopped almonds
1/4 tsp. salt
dash of pepper
CHEESE SAUCE:
2 tbsp. butter
2 tbsp. flour
1/4 tsp. salt
1/2 tsp. dry mustard
dash of paprika
dash of cayenne
1 1/4 cup milk
1 cup grated med. cheddar cheese.

Saute onion and celery in butter until onion is transparent. Add mushrooms and cook 2 to 3 minutes longer. Add turkey,almonds, seasonings and 1/2 cup cheese sauce. Place a spoonful of filling on each crepe and roll. Place crepes on a greased baking sheet, brush with melted butter and bake in a 400F oven for 10 minutes or until heated through. Pour remaining sauce over crepes when serving.

CHEESE SAUCE: Melt butter and blend in flour and seasonings. Gradually add milk. Stir and cook until smooth and thick. Add cheese and stir until melted.
