Avocado Cress Salad Salad & Dressings

2 bunches watercress
4 ripe avocados
juice of 2 lemons or limes
1 cup French Dressing
FRENCH DRESSING
1/3 cup cider or wine vinegar
1 cup salad or olive oil
1 tsp. salt
1/4 tsp. pepper
1/8 tsp. dry mustard
Combine ingredients in a jar. Cover and shake well. Shake again before using.

Rinse watercress well to clean; dry gently on paper towels. Line a platter or shallow bowl with cress. Slit each avocado skin lengthwise into quarters, pull back skin to peel. Cut into wedges and slip from the pit. Moisten wedges in lemon juice and arrange on cress. Garnish with alfalfa sprouts and serve with dressing.
