Avocado Mousse Salad & Dressings

4 medium avocados
1 small onion, grated
2 tbsp. lemon juice
1/4 tsp. white pepper
dash of Worcestershire sauce
2 tbsp. gelatin powder
1/4 cup cold water
1/2 cup boiling water
1 cup cream, whipped
1/4 cup mayonnaise

Mash avocado flesh until smooth, with onion, lemon juice and seasonings. Soften gelatin in cold water. Add boiling water and dissolve gelatin. Cool until gelatin reaches an egg-white consistancy. Fold in whipped cream, mayonnaise and avocado. Pour into 10 molds (i.e.muffin tins) and refrigerate to set.

To serve, unmold onto serving plates and garnish with shrimp, carrot curls or other garnishes.

NOTE: Halve the recipe and put in a small loaf pan to set. Unmold and serve, sliced, with smoked salmon slices on small pumpernickel squares.
