Cucumber Salad, Noreen's | Salad & Dressings |
1 cup white vinegar
1 cup white sugar 2 large English Cukes 2 red onions |
1/2 small bottle marinated red pepper(pimiento) sections
1/2 tsp. dried dill weed( fresh is better, if you have it ) salt & freshly ground pepper |
Mix the vinegar and sugar together and heat to dissolve sugar.( I use the microwave). Set aside to cool.
Thinly slice the cucumbers into a large bowl. Salt and weigh down
( I use a slightly smaller bowl with a heavy rock in it). Put in the refrigerator for 1 hour. Drain off the accumulated liquid and add water to cover cukes. Swish around with your fingers, carefully and then strain off the water. Squeeze out excess water with your hands. Put the cukes in a bowl and cover with the vinegar-sugar mixture.* Add finely chopped red onion and dill. Marinate in the refrigerator for at least 1 hour. Just before serving, add the finely chopped pimiento and salt & pepper to taste. Drain off some of the marinade, but not all of it.
* Up to this stage cucumber preparation is the same for several recipes. The marinade can be sour cream, dill and onion or just the vinegar-sugar mix or your favorite salad dressing.
