Curried Chicken Calad | Salad & Dressings |
1 1/2 to 2 cups chicken
1 tsp. grated onion 1 tsp. lemon juice 1/3 cup chopped celery 1/2 cup diced peeled apple 1/4 cup diced cucumber |
2 tbsp. freshly chopped parsley
salt & pepper to taste 1/2 tsp. curry margerine 1/3 cup mayonnaise lettuce |
Add a tsp. of water to the curry, stir. Heat a little margerine in a small fry pan. Cook the curry mixture in the pan over low heat for 2 to 3 minutes, stirring constantly. Cool. Add to the mayonnaise and set aside.
Mix the first 8 ingredients together. Add the mayonnaise-curry mixture and fold in. Serve on a bed of lettuce.
