2 Belgian endives
1 head radicchio or ruby lettuce 1 head Boston lettuce DRESSING: 2 tbsp. balsamic vinegar 1 tbsp. Soy sauce 1 tbsp. lemon juice 2 tsp. Liquid honey |
1/2 tsp. minced gingerroot
1/2 tsp. salt 1/4 tsp. pepper 1 clove garlic ,minced 1/4 cup olive oil 2 tbsp. each chopped fresh cariander and basil CANADIAN LIVING MARCH/'95 |
DRESSING: In a bowl whisk together vinegar,soy sauce, lemon juice, honey, ginger, salt, pepper and garlic; gradually whisk in oil. Stir in coriander and basil.
Trim endives; separate into leaves. Separate and tear radicchio and Boston lettuce into bite-size pieces. In a salad bowl toss greens with dressing. Makes 6 servings.
