Lentil Salad | Salad & Dressings |
1 cup brown lentils
1 cup diced carrots 1 cup diced onion(red preferred) 2 large garlic cloves,minced 1 bay leaf 1/2 tsp. thyme 1 can chicken broth water |
2 tbsp. olive oil
2 tbsp. lemon juice(1/2 lemon) 1/2 cup diced celery 1/4 cup chopped fresh parsley 1/4 cup chopped red pepper,seeds removed 1/4 tsp. freshly ground pepper salt to taste |
Combine lentils, carrots, onions, garlic, bay leaf, thyme and chicken broth in a saucepan. Add enough water to cover by at least 1".Bring to a boil, reduce heat and simmer,uncovered, until lentils are tender but not mushy( 20 to 25 minutes). Drain and remove bay leaf. Add oil, lemon juice, celery,pepper, parsley, salt and pepper. Toss to mix. Serve at room temperature.
