1 head of romaine lettuce
1 green pepper 2 stalks celery 3 or 4 little long green onions 1/2 cucumber, peeled,seeded and cut in 1/2" cubes |
parsley flakes
salt & pepper to taste 1 large ripe tomato,cut into 8 wedges 1 peeled hard boiled egg, thinly sliced Edna,s Dressing or dressing of your choice |
Separate the romaine into leaves,wash and discard any bruised ones. Shake dry and dry between paper towels. Rinse the celery and dry with paper towels. Wash the pepper, dry and remove seeds, cut into thin strips about 1" long. Peel the onion and chop into little circles; use some of the green stem part.
Into a large bowl carefully rip the romaine into bite-size pieces. Cut the celery into 1/4" slices across the grain and add to bowl. Add the pepper slices and the cucumber cubes. Sprinkle the onion circles over. Sprinkle with parsley flakes, salt & freshly ground pepper. Arrange the tomato wedges around the edge of the salad and decorate the center with hard boiled egg slices.
Serve with the dressing in a separate container.
