Potato Salad, German | Salad & Dressings |
6 medium potatoes
1 finely chopped onion 1 cup finely chopped celery 1 unpeeled tart apple, finely chopped 2 tbsp. lemon juice 3 hardboiled eggs,sliced |
1 tsp. salt
1/4 tsp. paprika 1/4 cup French Dressing sour cream or mayonaisse fresh parsley or fresh dill weed |
Cook potatoes in boiling ,salted water for 20 to 25 minutes or until tender when pierced with a fork.
Meanwhile combine apples and lemon juice. Then combine them with the celery,eggs,salt,paprika and onion. Add the dressing and mix well.
Peel and slice the cooked potatoes and gently add them to the rest of the salad and chill in the refrigerate for 4 to 5 hours. Lust before serving add sour cream or mayonaisse to taste.
Garnish with fresh parsley or dill sprigs.
