Potato Salad, Noreen's Salad & Dressings

6 new potatoes,medium size
boiled, skinned and cubed
1 onion,finely chopped
3 hard boiled eggs, sliced
1 cup chopped celery
1 cucumber,diced
1/2 tsp. salt
1/2 tsp. paprika
1/2 tsp. parsley
1/4 cup French dressing
mayonnaise
chives(optional)

Serves 8 to 10

Combine all ingredients except eggs and mayonaise.Chill 4 to 6 hours. Just before serving, add eggs and mayonnaise and mix carefully. Decorate with egg slices and freshly chopped chives

If desired, add 1 cup grated carrot.
