Watercress and Orange Salad Salad & Dressings

1 large head Boston lettuce, washed and dried
4 medium naval oranges
2 firm ripe avocado
2 tbsp. lemon juice
2 med. red onions
2 med. bunches watercress leaves
1/2 cup chopped walnuts(optional)
DRESSING:
1/4 cup honey
1/2 cup cidar vinegar
1/2 cup salad oil
1 tsp. poppy seeds

Tear lettuce into bite size pieces. Arrange on individual plates.

Separate oranges into sections( after peeling). I marinated orange sections in sugar syrup for 2 hours.

Peel and pit avocados;cut lengthwise into 1/2" slices and marinate in lemon juice. Cut onions in half lengthwise and then crosswise into 1/8" pieces.

Place the watercress(washed and dried) on the lettuce in the centre of the serving plates. Surround with slices of oranges, avocado and onion. Pour sweet and sour dressing over the salad and serve. Serves 8.

DRESSING: In a blender, process honey and vinegar 1 to 2 minutes. Pour oil through top hole with motor running. Add poppy seeds and process to blend.
