Cranberry Chutney Sauces & Gravies

3 cups cranberries,fresh or frozen
1 cup chopped dried apricots
1/2 cup chopped dates or prunes
1/2 cup chopped onions
1/4 cup chopped preserved ginger
1/2 cup cider vinegar
1/2 cup corn syrup
3/4 cup packed brown sugar
1 tbsp. grated orange rind
3/4 cup orange juice
1/2 tsp. dry mustard
1/2 tsp. salt
1/4 tsp. ground ginger

In a large heavy saucepan, combine all ingredients. Bring to a boil over med. -high heat; reduce heat to low and simmer, uncovered, for 15 to 20 minutes or until thickened and cranberries have popped, stirring often. Makes about 4 cups.
