Cranberry Sauce Sauces & Gravies

1 pkg. cranberries
1 1/2+ cups sugar
2 cups cold water
1 pkg. cranberries
2 cups cold water
1 3/4 cups sugar

Boil rapidly together all the ingredients until the berries pop open.(about 5 minutes,). Cool. Makes 1 1/4 quarts whole cranberry sauce.

MOLDED CRANBERRY SAUCE

Boil rapidly together the berries and the water until the skins pop as above. Press through a fine sieve to remove skins and seeds.

To the liquid add the sugar. Boil rapidly for 3 minutes, stirring occasionally. Pour into molds. Cool at room temperature, store in refrigerator.

Makes nearly 1 quart.
