Tomato Sauce | Sauces & Gravies |
3 tbsp. olive oil
1 cup finely chopped onion 1/4 cup chopped celery 1 finely chopped carrot 2 cloves garlic,minced 1 lb. can tomatoes 1 small can tomato paste |
1 cup water or consomme
1 scant tsp. oregano 1 tsp. salt 1 1/2 tsp. sugar 1 tsp. dried red pepper 2 to 3 fresh basil leaves |
Heat olive oil; add the onion and saute until golden; add the celery, garlic and carrots. Simmer 2 minutesAdd the tomatoes, tomato paste, water or consomme and seasonings. Cover and simmer gently for 1 hour. Check for seasonongs. Puree in a food processor or food mill. Cool and refrigerate until ready to use.
NOTE: You may add fried sliced mushrooms, if you like.
