Halibut, Mirabel Seafood

2 lbs halibut steak (about four
3/4" thick steaks)
salt & freshly ground pepper
paprika
1 egg
2 tbsp. milk
1 tbsp. olive oil
1 cup grated Swiss cheese
2 cups bread crumbs
1 garlic clove,sliced
1/4 cup butter

Wipe steaks with a damp cloth. Sprinkle both sides with salt, pepper and paprika.

Mix together the egg, milk and olive oil. Beat well with a mixer. Put egg mix in a flat dish.Dip the steak in the egg mix to cover both sides. Next dip the steaks in cheese. Redip in egg mix, making sure the cheese still clings to the steak. (pat it in, if necessary). Next dip in the bread crumbs, patting them in. Put the coated steaks on a plate and refrigerate a few minutes,up to 1/2 hour.

Just before cooking, preheat the fry pan to 325F-350F. Add the butter and the garlic and stir until all the butter is melted and bubbly. Remove the garlic.

Carefully put the steaks in the fry pan and fry 5 minutes. Turn the steaks over and brown the other side for 5 minutes. (make sure there is lots of butter). Turn again and cook another 5 minutes, and, if necessary, turn again and cook for another 5 minutes depending on the thickness of the steaks.

Serve with lemon slices or Hollandaise Sauce.
