Lobster Casserole; Clair Seafood

1-15 oz. can lobster
3 tbsp. butter
2 tbsp. cornstarch or flour
1/4 tsp. dry mustard
1 cup water
1/2 pint sour cream
1/4 cup sherry
2 cups cooked rice( use 1 cup raw to prepare)
1 cup bread cubes(small)
2 tbsp. melted butter
3 tbsp. + grated cheese

Combine the flour(cornstarch) and mustard and gradually stir in the water. Melt the butter in a saucepan and add the water-flour-

mustard mix and cook, stirring. on low heat, until smooth and thickened.Simmer for 1 minute. Add sherry and sour cream and cook until thick. Remove from heat and add the drained, coarsely chopped lobster.

Butter a 9"diam casserole and put a layer of cooked rice on the bottom. Cover evenly with the lobster and sauce.

For the topping ;melt the butter; add the bread cubes and stir to cover evenly. Sprinkle evenly over the top and then sprinkle evenly with the cheese.

Cook at 400F for 15 minutes. Serve with a tossed salad for supper or lunch.Serves 4 to 6.
