Salmon Loaf Seafood

1 1/2 cups leftover whipped potatoes
1 1/2 cups leftover cooked salmon, boned and skinned
2 eggs
1 tbsp. lemon juice
1 finely chopped onion
3 tbsp. butter
2 tsp. parsley flakes
1/4 cup milk

Saute chopped onion in butter in fry pan until golden..Add whipped potatoes and blend. Heat through. Thoroughly butter a 9"x 5" loaf pan.

Put eggs in a blender and whip. Gradually add potato and oniom mix and blend. Put mixture in mixing bowl. Put picked over salmon in blender. Add lemon juice,parsley and milk. Blend thoroughly. Add to mixture in mixing bowl and combine the two.

Put the mixture in the buttered loaf pan and freeze.

Thaw thoroughly and cook in a pan of hot water in a 350F oven for 40 minutes or until centre is set.

Serve with cooked peas and tomato slices, french bread and Hollandaise sauce. Serves 4.
