Salmon Schnitzel Seafood

2 lbs salmon filets(skinless)
cut into 8 pieces
flour
salt & pepper
2 or 3 eggs,beaten
2 cups fresh breadcrumbs
unsalted butter
olive oil
4 limes,sliced into 16 slices

Check the filets over to remove small bones, if any.

Place flour in a flat dish;add salt and pepper. Dredge each salmon filet in the flour, then dip into beaten eggs and then dip in crumbs and pat in.Set aside.

Heat fry pan to 350¼F. Add half butter ,half oil(about 1 tbsp each). Put in the filets and cook until golden on each side. How long depends on thickness of filets.( about 10 minutes total).

Serve at once garnished with 2 lime slices per filet.
