For the marinade
1/4 cup white wine vinegar 2 tsp. Dijon mustard 1/3 cup olive oil 1/3 cup Crisco oil 1 small onion, minced |
1 green pepper, peeled & minced
2 Tbsp. snipped fresh chives 1 garlic clove, crushed and minced 1 tsp. Worcestershire sauce 1 tsp. lemon juice 2LBS large shrimp (allow 5 per person). |
Ina large glass bowl, combine the vinegar, mustard.Add oil in a stream, whisking until the mixture is combined well.Add the onion, green pepper, chives, garlic,W. Sauce, lemon juice, salt and pepper to taste and combine the mixture well.
Put the shrimp in a large saucepan of boiling , salted water, return the water to a boil, and boil the shrimp for one minute or more, or just until they are firm.Drain the shrimp well and cool in cold water for a few minutes.Shell and devein.
Toss them in the marinade and let them marinate for 12 to 24 hours.Transfer the shrimp with a slotted spoon to a serving bowl and garnish with parsley and lemon slices
Serves 8 as a first course.
