Pear and Leek Soup Soups

1/3 cup sweet butter
3 cups sliced leeks
4 pears;peeled,cored and coarsely chopped
6 cups chicken stock
1 tsp. ground savory
1/4 tsp. white pepper
1 tbsp. lemon juice
1 pear; peeled, cored and sliced
blue cheese

In a large saucepan, heat butter. Add leeks; sauteĢ 10 minutes, until softened. Add chopped pears, chicken stock, savory and pepper. Bring to a boil, reduce heat, and simmer 20 minutes, until pears are softened. Stir in lemon juice.

In batches,pureeĢ in blender or food processor, until smooth.

Soup may be served hot or cold. If serving hot, return to saucepan and heat through. If cold, pour into a large bowl and chill.

Garnish with thinly sliced pears (2 slices) and blue cheese.

Makes 8 servings.
