Carrots and Leeks | Vegetables & Fruits |
1 lb. carrots,(6 medium)
4 medium leeks 2 tsp water |
1 tbsp. soft margerine
1/4 cup chopped fresh parsley salt & pepper to taste |
Scrape carrots and cut diagonally into 1/4" thick slices. Clean leeks,discarding tough green parts. Slice white and tender green parts into half lengthwise; cut crosswise into 1/2" thick slices.
In a microwave-safe dish, combine carrots and water; cover with lid or vented plastic wrap and microwave on high power for 5 minutes. Stir in leeks;dot with margerine. Cover and microwave on high power for 3 to 5 minutes or until veggies are tender. Stir in parsley;season with salt and papper to taste.
Chopped fresh dill,thyme or basil is a nice addition to this dish.
