2 cups dried lentils 6 med. onions,sliced 2 tbsp. chopped parsley 2 oz. salt pork,sliced 1 bay leaf,crumbled 1/4 tsp. ground cloves 1/2 cup butter freshly ground pepper RECIPE#2 |
2 cups dried lentils
2 slices bacon 4 tbsp. chopped onion 1 garlic clove,minced 2 tbsp. wine vinegar 1 tbsp. cornstarch 2 tbsp. sugar 1/4 tsp. ground nutmeg 1 tsp. salt freshly ground pepper |
#1 BOILED LENTILS
Combine all ingredients except butter and simmer in water to cover for 30 minutes. Drain. Add butter and mix well. Serves 6.
#2 SWEET AND SOUR LENTILS
Simmer lentils in salted water to cover for 30 minutes. Drain lentils and keep them hot. Keep broth. Saute bacon until crisp. Remove bacon, cool, crumble and save it. Add onion and garlic to bacon fatand saute until golden brown. Combine 1 cup of lentil broth with remaining ingredients. Add to onion mixture and cook until thickened,stirring constantly. Add lentils and mix well. Sprinkle with crumbled bacon. Serves 6.
