1 cup fine bread crumbs 4 tbsp. chopped parsley 2 minced garlic cloves 32 to 40 mushroom caps 6 tbsp. cooking oil |
salt & freshly ground black pepper to taste
Recipe No. 2 1 1/2 lbs. mushrooms 1 cup olive oil 1 cup dry red wine 1 garlic clove,minced |
Mix together the crumbs, parsley and garlic.
Brush the caps with oil and roll in the crumb mixture. Sprinkle with salt and pepper.
Broil the mushrooms under moderate heat, about 5 minutes on each side. Sprinkle with more oil, if necessary. Serve as a garnish for meats.
Remove mushroom stems( save stems for soup). Score caps and marinate in remaining ingredients for 2 to 3 hours. Drain and keep marinade. Broil caps under medium heat for 5 minutes or until tender. Heat marinade and serve with broiled mushrooms. Serves 6.
