Mushroom Caps, Broiled Vegetables & Fruits

1 cup fine bread crumbs
4 tbsp. chopped parsley
2 minced garlic cloves
32 to 40 mushroom caps
6 tbsp. cooking oil
salt & freshly ground black pepper to taste

1 1/2 lbs. mushrooms
1 cup olive oil
1 cup dry red wine
1 garlic clove,minced

Mix together the crumbs, parsley and garlic.

Brush the caps with oil and roll in the crumb mixture. Sprinkle with salt and pepper.

Broil the mushrooms under moderate heat, about 5 minutes on each side. Sprinkle with more oil, if necessary. Serve as a garnish for meats.

Remove mushroom stems( save stems for soup). Score caps and marinate in remaining ingredients for 2 to 3 hours. Drain and keep marinade. Broil caps under medium heat for 5 minutes or until tender. Heat marinade and serve with broiled mushrooms. Serves 6.
