Peas and Carrots,Minted | Vegetables & Fruits |
2 cups shelled fresh green peas (about 1 3/4 lbs)
3/4 cup diced carrots 2 tsp. margerine 1 1/2 cups sliced mushrooms |
1/4 cup chopped green onions
1 tbsp. minced fresh mint 1/4 tsp. salt |
Bring 3 cups water to a boil in a med. saucepan. Add peas and carrots; cook 10 minutes or until tender. Drain; set aside.
Melt margerine in pan over med. heat. Add mushrooms and green onions; saute« 2 minutes. Add pea mixture, mint,and salt; saute« 2 minutes. Makes 6 -1/2 cup servings.
