Peas with Maple Glazed Onions Vegetables & Fruits

1 bag(284 gram) pearl onions, peeled
1 tbsp. butter
pinch salt
2 tbsp. maple syrup
2 cups fresh peas
1 tbsp. chopped fresh mint

Peel onions and place in a small frying pan. Add 1 cup of water, and maple syrup. Bring to a boil and simmer until the water has completely evaporated. Swirl the onions around in the syrup to glaze them evenly, then removepan from heat. Be careful not to let the syrup burn.

Bring 1 liter of water to a boil. add 1/2 tsp. salt and the peas. Boil rapidly until just cooked. Drain. Toss peas with the onions and fresh mint. Serve immediately. Serves 8.
