Potato Bake Vegetables & Fruits

6 med. potatoes
3 tbsp. butter
1 egg
1 cup sour cream
1/4 cup milk
2 tbsp. chopped parsley
1 finely chopped onion
2 tbsp. butter
1 cup fine dry bread crumbs
3 tbsp. butter

Cook the peeled potatoes in boiling water for 20 minutes or until done. Drain, add butter. Mash. Add egg and milk and sour cream and beat with mixer. Add parsley and onion ( which has been simmered in the fry pan in butter until golden) and blend.

Put in a buttered casserole.

Cook bread crumbs in butter until browned slightly*. Just before cooking,sprinkle buttered crumbs over top of the potatoes in the casserole. Bake 20 to 30 minutes at 325F.

Note; Can be done ahead up to *. Great for a party.
